My son and I love muffins. Every time I buy them at the store, I have to hide them just so he won’t eat them all in one day! When he does eat muffins, he usually takes out the best part! For example, if I buy blueberry muffins or even banana nut muffins, he removes the blueberries and the nuts! That’s when I realized he would prefer plain muffins!




My son has Autism and a very picky eater. I love that he loves muffins but I dislike when he takes them apart to remove the best part! Now I make easy peasy plain muffins just for him!
I can actually make muffins for myself in the same batch by adding blueberries, chocolate chips, dark chocolate chips, peanut butter chips, other fruits, nuts, etc. I can easily make half plain muffins and the other half of what I want!

Are you ready to make easy peasy plain muffins? If you prefer using silicone baking cups, I found the OXO 12pk Baking Cups or the Chicago Metallic 12 Piece Baking Cups that have positive reviews! Instead of using muffin tins, I plan on placing the baking cups on a baking pan!
Our easy peasy plain muffins make 6 muffins, however, you can easily double the recipe and make 12. You can make 6 plain muffins and get creative with the other 6 muffins!
Easy Peasy Plain Muffins
Makes 6 muffins
Ingredients



- 2 cups flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup milk
- 1/2 cup (1 stick) butter
- 2 large eggs, room temperature
Directions



Preheat the oven to 350°F. Then line the muffin pan with paper liners.



In a large mixing bowl add flour.



Then crack two eggs and add the baking soda.



Pour in the milk



sprinkle in the salt



Mix well.



Divide the batter evenly between the muffin cups.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out dry.
Transfer muffins to a cooling rack.
Serve & enjoy!
